2020 has been an incredibly challenging year for many of us and the FnB industry has been hit hard with the dine-in restrictions leading to some heartbreaking closures. Yet, chefs and their teams have been working extremely hard to always set the bar higher, reinvent themselves and shape an exciting future for the industry. Despite the obstacles and challenges, Hong Kong and Macau remains one of the world’s most vibrant dining scene. This year again, and for the 13th year, the Hong Kong and Macau Michelin Guide pturns the spotlight on those restaurants which have been performing at the highest level with providing high quality to exceptional cuisine. The 2021 Hong Kong and Macau Michelin Guide just awarded 81 restaurants (VS 85 in 2020 )their Michelin stars this January 27, 2021. This year, Hong Kong sees a total of 8 newly minted one-star restaurants.​

Making its debuts in the region is the new Michelin Green Star distinction highlighting restaurants operating with sustainability in mind be it with working with local producers using eco-friendly farming methods, contributing to food waste reduction and/or promoting recycling. The two very first awardees are Roganic in Hong Kong and IFT Educational Restaurant in Macau.

Local cuisine wins big among the newcomers with four newcomers - Man Ho, The Chairman, Wing Lei Palace (Macau) and Ye Shanghai TST – while Japanese cuisine inspires the rest of the list of newcomers with Yardbird, The Araki, Zuicho and Spanish/Japanese restaurant Ando.  
 
Most of the restaurants which were in the list last year but are not in 2021 have unfortunately closed their doors already and this year sees close to none restaurant being downgraded while still operating.
 
The two most exciting moves come from chef Olivier Elzer at L’Envol and chef Vicky Lau at Tate, both jumping from one to two  - very well deserved – stars.
