Meet Bjorn Frantzén and discover Frantzén's Kitchen in Sheung Wan

Björn Frantzén is the Swedish chef behind one of the best restaurants in the world: Restaurant Frantzén in Stockholm – two Michelin stars for seven years and in The World’s 50 Best Restaurants list for four years running.
It is his first restaurant abroad and lucky us, he has chosen Hong Kong!

Frantzén Kitchen will be headed by Jim Löfdahl and is described as "a modern bistro with influences from both Nordic and Asian cuisines."
 
It was my first Scandinavian culinary experience and I have loved it – the “French toast” with truffles (of course!) and the “Swedish sushi” to start, the scallop in “Nordic” dashi very surprising, the delicious cod “Janssons”, and the most tender chicken I have ever tried… Oh I have no word, you have to try yourself! ;)

The restaurant is exactly what you are expecting from a Swedish place… designed, minimal and cozy. Please open the small drawer inside the table and chose your cutlery, this is so cute!

And do not forget to order the wine in French not without asking Jean-Benoit's advices, the sommelier and his precious South of France accent!
 
I have met Bjorn and have asked him some questions…
 
You used to be a football player. What is the main similarity between playing football and cooking?
Running a star kitchen is very different from a football game but it is also a team work...just like football!
 
Why did you choose Hong Kong to open your first restaurant abroad?
I think Hong Kong is the best place to set up my first restaurant abroad and introduce a fusion Nordic Asian cuisine. And also because the Swedish family in Hong Kong is patriotic just like the French one! ;)
 
Where do you get your inspiration from?
Everywhere!
 
Why will French people love your food?
I used to work in France. French cuisine is basics for cooking. French people know very much about food, it is in your DNA! Expectations are very high and I believe my food is tasty and French fine palates will love it!
