Guest of the month: Gilles Bosquet unveils his favourite addresses in HK

This month French cuisine takes the stage with the French Gourmay. Instead, Gilles Bosquet, the Michelin-starred French chef, puts English cuisine in the spotlight and becomes the head chef of Gordon Ramsey’s latest trendy address, Bread Street Kitchen, opened a few month ago. He’s shared his favourite places with us…. And mostly they are French !

My favourite restaurant
I’m pretty picky. For me a good restaurant is one you feel comfortable in. No fuss, unpretentious, friendly with a good value for money. There’s nothing worse than coming out of a restaurant and still being hungry. Métropolitain has all it right! Chef Franck is really nice and he serves hearty and copious plates of food!

My favourite bar
Even if I don’t have much time to go out with my working hours, I like to blow off steam at Pastis or F.A.B. I can meet a lot of French people there, the owners are really nice and the atmosphere is great. Plus it’s really close to my restaurant and if I feel like nibbling I know that I’ll find something cheap and cheerful.

My favourite sports gym
My squash club in Central. But I messed up my back last week, so I’m going to have to rest up for a bit, shame!

My favourite destination
Without a doubt – Japan! I have many friends as I’ve also had a restaurant there. I used to go to small food shacks with my team, so good. I love Japanese cuisine. And Japanese people are hard working, rigorous, friendly and welcoming. When they do something, they do it well, no need to check up after them. It’s a real pleasure working with them.

My favourite book
Books by Ducasse and Robuchon, the best ones. A great source of inspiration for me. I have true admiration for them and admit that their recipes are often used as bases for mine, even if it’s an English restaurant.

A recipe to share?
A friendly recipe, to share, and easy to make at home for close ones. When we entertain we shouldn’t be spending the evening in the kitchen but make something that can stew or cook in the oven so that you can enjoy your guests. Shepherd’s pie (link) is perfect.
