Bibo mania

Bibo, highly famous fine dining gem in Sheung Wan, has just launched its revamped menu and I thought it was the perfect excuse to treat myself to a very arty dinner! 
 
Have you ever been there? Might be one of the most beautiful place on the island, explaining why the restaurant is the only one in HK to hold membership to the Relais & Château group of properties. Every little details is a piece of art from the crazy contemporary artworks from Basquiat, Vhils, Bansky, Damien Hirst and King of Kowloon to the stunning Bernardaud plates. Not just any menu can do in such a place, you definitely expect the dishes to stand out!
 
I can also feel some prohibition vibes there and it definitely makes me want to try a cocktail! Asking them to surprise me … And here comes my Bibo Mary – spicy Ketel One vodka, tomato reduction, smoked pink rock salt, horseradish clouds on top. How could they possibly now that Bloody Mary is my fav cocktail? I have tried several of them around town and can say that the Bibo’s one is on my top list.
 
Shall we move to the starters? Le Foie Gras de Canard is always a good choice. But I am looking for the ultimate comfort dish … Les Escargots might do! An upgraded version of this very French classic: snails sautéed with girolles, poulette sauce and 54-degrees Taiyouran egg (Japanese egg with sweet and thick orange yolk).  Just what I expected, a tasty and comforting dish. Definitely in the mood for more from Executive Artist Mutaro Balde. On my plate Le Homard Bleu de Roscoff, Not saying this because I am French but definitely Breton lobster is the best! And just because what’s in my plate is super yummy does mean I am not going to have a bite of the other dishes on the table. Absolutely loved the super melty charcoal grilled Japanese beef from Le Boeuf de Miyazaki.  Every dish being nicely sublimated by the perfect pairing from Wallace Lo, China’s Best Sommelier. Pssst Wallace is not only a great sommelier, he also has that so vintage perfect look … Love it when the staff matches the atmosphere of the place, and knows his job (which is not always easy in Hong Kong, let’s be honest).
 
I am full already but cannot say no to a sweet touch. Could have gone for the refreshing La Pomme Rose staring Pink Lady apples but felt like testing the limit of my gluttony and choose La Noisette – hazelnut joconde cake, Grand Marnier mascarpone cream, coffee and caramel, topped w/ hazelnut milk chocolate glazed and sablé biscuit.
 
Bibo is not the most affordable restaurant in town but having the best ingredients, mostly sourced in France from producers Chef Mutaro Balde knows from previous experiences in Michelin starred restaurants, comes with a price and this is one you won’t regret to pay from time to time.
